Putu Piring Tengkera

Putu Piring Tengkera

It’s not all about luxury restaurants, sometimes you just need quick, tasty and simple snack during the day. One of the stalls in Malacca can offer you this and even more. With such stalls you will forget about gourmet restaurants for sure. The small stall belongs to a married couple, who manage to do all the work by themselves. Just remember, that the best time to enjoy the putu piring is while they are still warm and fluffy. But you couldn’t wait to eat them anyway. If you are in a hurry, you can always have something like their humble rice cake or other two “putus” (putu mayam and putu buluh). The small but delicious cake with young coconut and on a banana leaf will help to forget about hunger and good mood. Bonus: everything is cheap and is done in a few minutes. Besides three fresh “putus” you can always buy pre-packed Gula Melaka and Nyonya Curry Powder there.

Recipes:

Ingredients:
(Can produce around 15 pieces of plates)
1.         2 cups of rice flour
2.         3/4 tablespoon of salt
3.         150ml hot water
4.         1/2 cups of grated coconut (just take the whites and mix with 1/2 teaspoon of salt)
5.         1/2 cup of melaka sugar, shredded
6.         5-6 pandan leaves
7.         muslin cloth (white cloth rarely sized 6-8inch square)
8.         Banana leaves are cut into two square pieces

How To Cook?
1.         Rice flour is fried without oil for 5 minutes. Then sieve and let cool.
2.         Mix salt with hot water and pandanus leaves. Take a little time to get smelly pandanus.
3.         Shake off in flour. Sprink in order to produce breadcrumbs. please use hot water.
4.         Preheat the steamer. Sprinkle a putu mold with a little oil. Slab a little flour, then a little brown sugar. Add a little more flour on it.
5.         Place the muslin cloth on it and cover the mold on the steamer (especially for a special steamer.)
6.         Leave it for 3-4 minutes and lift the mold. Leave the putu in the muslin cloth for about a minute before cloth and  putu are lifted.
7.          Open the muslin cloth and place a little grated coconut that has been mixed with a little salt. Put a banana leaf on it and turn in a putu.
